Custom Elite is the bespoke tier. Every project starts with a 45-minute design call with Sam. We build it around your menu, your venue, your brand. Permit-prep work as an add-on, unusual plumbing, the things nobody else makes.

Custom Elite is what we do when the locked Signature spec is not the right answer. Three things define it: Sam at the front of the project, permit help available as an add-on, and a final build that exists nowhere else in the world.

i. The call

Sam-led design

Every Custom Elite starts with a 45-minute call with Sam. He sketches with you, scopes the build, and asks the questions a customer rarely thinks of until week three of construction. You walk out of the call with a clear understanding of what the build is and what it costs.

The estimate follows within five business days. Nothing happens, no money changes hands, until you have it in hand and approve it.

ii. The permit

Permit help, as an add-on.

The build itself does not include the permit — every county runs slightly differently, and your local environmental health office is the source of truth. What we do is help you get the process started: NSF-compatible specs, three-compartment configurations, hot-water plumbing, mobile food facility documentation, and answers to the questions inspectors ask.

We have helped customers get over the line in 14 California counties and 8 other states. The permit itself is yours to file, but you don't file it alone.

iii. The build

The build nobody else has

Past Custom Elite projects: a nine-foot copper-clad cocktail bar for a downtown gallery opening. A coffee cart with built-in cold-brew taps for a roaster who wanted to stop hauling kegs. A charcuterie cart with refrigerated drawers for a catering company that needed to plate at temperature.

How a Custom Elite begins

Within five business days of the call. Detailed line items, no surprises.

Agreement and deposit

Project Agreement signed. 45% deposit locks the production slot.

v.

Build and deliver

12–16 weeks. Progress payment at production start. Final 20% at ship.

What happens after you submit.

Amanda reads your application within one business day. If we are the right shop for what you are building, she sends a Calendly link to book your call with Sam. If we are not — if your build is below the floor, outside our scope, or simply not what we do — she tells you that, and points you to a shop that can help.

Either way, you hear back from a person.
